Liáng Chú Měishí – Hézhǎng guā chǎo sù jī kuài ~ Yuèshì jiācháng cài “The Kitchen of Liang: Stir-fried Vegetarian Chicken with Zucchini – Cantonese Home-style Dish”

In the world of Cantonese cuisine, stir-fried palm melon with crispy and sweet chicken pieces is a popular savory-sweet home-cooked dish. We can mix things up a bit by replacing the chicken with vegetarian chicken cutlets to create a delicious vegetarian dish!

Ingredients:

– 14 oz palm melon
– 12 oz vegetarian chicken cutlets
– 2 oz sweet red pepper
– A little ginger, garlic, and dried shallots
– A dash of sesame oil
– 2 tablespoons of cornstarch water
– 1 tablespoon of vegetarian oyster sauce
– 1/4 teaspoon of sugar
– 1 teaspoon of mushroom powder
– A dash of light soy sauce
– A pinch of black pepper
– 2/3 cup of water

1. Peel the skin and remove the core of the palm melon, then cut it into small pieces. Cut the vegetarian chicken cutlets and red pepper into small pieces as well.

2. Heat oil in a pan, fry the vegetarian chicken pieces until golden brown on both sides, then set aside.

3. Add a little oil to the pan, stir-fry the ginger, garlic, and palm melon for a while.

4. Add water and all seasonings, cook over medium heat for 3 minutes.

5. Return the fried chicken pieces and sweet red pepper to the pan, stir-fry evenly, and cook for 2 minutes.

6. Thicken the sauce with cornstarch water, add a little sesame oil, and serve.
