Making Rice Cake Rolls without Fermentation, Scholar Helps Debunk Rumors in the Poisoning Case of Pao Lin

A food safety incident at Baolin Tea House in Taipei City, Taiwan has resulted in 2 deaths and 4 injuries, with multiple people suspected to have been poisoned by Burkholderia acidivorans (formerly known as rice fermentation fungus acid), sparking concerns over food safety in the community. Addressing rumors circulating online, Jiang Yuzheng, director of the Asia University Food Safety Testing Center, clarified that wet rice flour used in Taiwanese noodles and rice cake strips does not require fermentation. It is speculated that oil applied to the plastic bags used to package the rice cake strips might lead to the proliferation of Burkholderia gladioli complex (BGC) and the production of Burkholderia acid (BKA) toxins. He mentioned that the occurrence of Burkholderia acid is rare and can be prevented by maintaining proper environmental conditions.
