When Pumpkin Meets Sweet Potato: Creative Vegetarian Soup with Sweetness

This recipe introduces a dessert soup rich in symbolism – “Sweet and Rich Reunion”, made with detoxifying ingredients such as pumpkin, sweet potato, red dates, dried longan, white fungus, and more, creating a delicious and delightful treat.

Ingredients:

150g pumpkin, 120g sweet potato, 2g salt, 25g white fungus, 20 red dates, 150g glutinous rice flour, 2000cc water, 90g rock sugar, 60g dried longan

Instructions:

1. Remove the seeds from the pumpkin, peel, slice, and place in a dish.

2. Heat a pot of water, add the sliced pumpkin, cover with a lid, and steam on low heat for 10 minutes.

3. Peel the sweet potato, cut into thick slices, then into squares.

4. Soak the sweet potato in salted water to prevent discoloration.

5. Soak the white fungus in warm water at 40°C for about a minute, then cut into pieces and set aside.

6. Remove the seeds from 20 large red dates.

7. Gently cut the red dates in half and soak in warm water at 40°C for about three minutes.

8. Mash the steamed pumpkin, mix with glutinous rice flour to form a dough, knead on a silicone mat, wrap in plastic wrap, and let it rest for 5 minutes.

9. Take out the red dates, drain, and let them rest for 5 minutes.

10. Remove the plastic wrap from the pumpkin dough, take a small amount, roll into a ball, place inside the red date, shape into an elongated form.

11. Roll a portion of the pumpkin into a small ball.

12. Boil 2000cc of water, add the sweet potato, cover and cook for 3 minutes.

13. Add the red dates, small balls, simmer on medium-low heat, gently move the balls without sticking to the bottom, cook until balls float, then simmer for another 3 minutes.

14. Add rock sugar, dried longan, white fungus, stir gently until sugar melts. Once it boils, turn off the heat.
